Tonkotsu Ramen (豚骨ラーメン)

寒い昨夜は、ラーメン。
スープは、初めて作った自家製豚骨スープ。
たっぷりのレタスと、ハムと
お海苔をのせて。

Since last night was cold,
our dinner is Ramen.
The soup is home made "Tonkotsu Soup," that was my first challenge.
A lot of Lettuce, ham and Nori are placed over the ramen.

スープのベースは、先のパーティーで焼いたハムの骨つき部。
冷蔵庫にあった玉ねぎ、新玉ねぎの緑の部分、ジンジャーを入れて、
あっさりタイプのスープを目指し、
こまめに灰汁取り。
コトコト数時間。

From the Party Ham,
a part of meat with bone become the base of the soup.
Adding Onion, Green stems of new onion, Ginger.
Skimming carefully,
simmer "Koto Koto"....

仕上げに甘い西京味噌を加えて、出来上がり。
お店とは一味違った豚骨スープの完成。
テコテコスープが苦手な私には、この位がちょうど良い。笑
「豚骨ラーメン」を初めて食した彼も、完食!
いつの日にか、日本で本物の豚骨ラーメンを口にする時が来るかな?

Adding the sweet Saikyo Miso into the soup.
My "Tonkotsu Soup" is completed.
It is completely different from the Ramen Shop soup.
However, while I am not good at thick oil soup,
I love this light soup :-)
It is the first time for my partner to have "Tonkotsu Ramen,"
and he loves it !
I think someday he should try "Real Japanese Tonkotsu Ramen" in Japan !?
